  • 1 lb. zucchini squash, sliced 1/4-inch
  • 1 lb. yellow squash, sliced 1/4-inch
  • 1/2 lb. carrots, julienne or snow peas
  • 1 red bell pepper, 1/4-inch strips
  • 1/2 medium onion, sliced
  • 1/2 stick butter
  • 1 Tbsp. garlic powder
  • 1 tsp. thyme
  • salt to taste
  • pepper to taste

    Boil carrots al dente.

    At 300° or low-medium heat, place butter in skillet and melt.

    Add vegetables and spices, turning 2 or 3 times until just tender (approximately 6 minutes).
