  • 2 lb. chuck (coarse grind)
  • 2 c. tomato juice
  • 2 oz. chili powder
  • 1 medium onion, chopped
  • 1/2 tsp. black pepper
  • salt to taste
  • 1/2 tsp. ground cumin
  • 2 small garlic cloves, chopped
  • 1/4 c. masa flour
  • 1/2 tsp. red pepper (optional)

Directions

    Put meat into heavy skillet (or cast-iron pot).

    Cook all the moisture out of meat until slightly browned.

    Add tomato juice and water (for desired consistency).

    Simmer until meat shows signs of tenderness.

    Add chili powder, onion, black pepper, salt, cumin and garlic.

    Continue to cook until meat is thoroughly tender.
