- 2 lb. chuck (coarse grind)
- 2 c. tomato juice
- 2 oz. chili powder
- 1 medium onion, chopped
- 1/2 tsp. black pepper
- salt to taste
- 1/2 tsp. ground cumin
- 2 small garlic cloves, chopped
- 1/4 c. masa flour
- 1/2 tsp. red pepper (optional)
Directions

1Put meat into heavy skillet (or cast-iron pot).

2Cook all the moisture out of meat until slightly browned.

3Add tomato juice and water (for desired consistency).

4Simmer until meat shows signs of tenderness.

5Add chili powder, onion, black pepper, salt, cumin and garlic.

6Continue to cook until meat is thoroughly tender.
