- pastry for 2 (9-inch) pies
- 36 Ritz crackers
- 2 c. water
- 2 c. sugar
- 2 tsp. cream of tartar
- 2 Tbsp. lemon juice and grated rind of the lemon
- oleo
- cinnamon
Directions

1Break crackers coarsely into one pie shell.

2Combine water, sugar and cream of tartar in saucepan; boil 15 minutes.

3Add lemon juice and rind.

4Cool.

5Pour syrup over crackers, dot with oleo and sprinkle with cinnamon.

6Add top crust.

7Bake at 425° for 30 to 35 minutes.

8Serve warm.
