Mock Coconut Pie

Ingredients

  • 1/2 c. sugar
  • 8 pkg. Sweet 'N Low
  • 4 eggs
  • 1/2 c. diet margarine
  • 1/2 c. plain flour
  • 2 c. skimmed milk
  • 1/4 tsp. salt
  • 1/2 tsp. baking powder
  • 2 tsp. vanilla flavoring
  • 1 tsp. coconut flavoring
  • 4 c. cooked shredded spaghetti squash

Directions

    To cook squash, cut in half, lengthwise, and clean out seeds. Cook in microwave with 1/4 cup water for 10 minutes.

    Run fork over inside of cooked squash to get spaghetti like shreds.

    Place 2 cups squash in each of 2 greased and floured 8-inch pie pans. (I use Pam.)

    Put all other ingredients into blender.

    Pour equally over squash.

    Bake at 350° for 1 hour.

    Cut into 8 pieces.
