  • 1/2 c. lemon juice
  • 3 Tbsp. plain salt
  • 1 qt. cold water
  • 1 c. white sugar
  • 1 c. vinegar
  • 1 tsp. turmeric
  • 1 c. water or 1 c. beet juice
  • 1 tsp. pickling spice

Directions

    Boil solution for 7 minutes.

    Pour over beets and seal at once in preheated jars.

    Leave in canner 10 minutes in order to seal.
