- 1 (16 oz.) can kernel corn
- 1 (16 oz.) can creamed corn
- 2 eggs
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 1/2 c. crushed saltines
- butter as needed or cooking oil
Directions

1Mix corn, eggs, salt and pepper together, blending well.

2Add cracker crumbs and mix thoroughly.

3Let rest in refrigerator 1 hour. Form patties 2 1/2-inches in diameter by 1/2-inch in thickness.

4In a cast-iron skillet, pan-fry patties slowly in butter until brown and crisp.

5Makes 24 patties.
