- 1 cup yellow self-rising cornmeal mix
- 1 small onion, chopped
- 1/2 cup nonfat buttermilk
- 2 tablespoons vegetable oil
- 1 (8 3/4-ounce) can no-salt-added cream-style corn
- 1/4 cup fat-free egg substitute
Directions

1Coat a 9-inch cast-iron skillet with cooking spray. Place skillet in a 400° oven.

2Combine cornmeal mix and onion; stir well. Combine buttermilk and remaining 3 ingredients; add to dry ingredients, stirring just until moistened.

3Remove skillet from oven; pour batter into skillet. Bake at 400° for 25 minutes or until golden.
