- 3 eggs, beaten
- 3/4 c. vegetable oil
- 3/4 c. skim milk
- 2 c. sugar
- 2 tsp. vanilla
- 2 c. flour
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 1 (8 oz.) crushed pineapple, undrained
- 2 c. grated carrots
- 1 c. chopped nuts
- 1 c. flaked coconut
Directions

1Combine eggs, oil, milk, sugar and vanilla; mix well.

2Combine flour, cinnamon, baking soda and salt; stir into egg mixture. Stir in pineapple, carrots, nuts and coconut.

3Pour into greased and floured 13 x 9 x 2-inch baking pan.

4Bake at 350° for 50 to 55 minutes or until cake tests done.

5Do not overbake.
