  • 2-1/2 limes, divided
  • 1 pkg. (4-serving size) Jell-O Vanilla Instant Pudding
  • 1 cup cold milk
  • 1 Tbsp. white rum
  • 3/4 cup thawed Cool Whip Light Whipped Topping
  • 1 Tbsp. slivered fresh mint

    Cut lime half into 4 thin slices; set aside.

    Grate zest, then squeeze juice from remaining limes.

    Beat pudding mix, milk, rum and lime juice in medium bowl with whisk 2 min.

    Stir in Cool Whip, mint and 2 tsp.

    lime zest.

    Place 1 lime slice in each of 4 small dessert glasses as shown in photo.

    Spoon pudding mixture into prepared glasses; sprinkle with remaining zest.
