- 1 1/2 c. quick cooked oats, toasted
- 1 c. all-purpose flour
- 3 tsp. baking powder
- 3/4 tsp. salt
- 3/4 tsp. cinnamon
- 1/3 c. dark brown sugar, firmly packed
- 1 large egg
- 2/3 c. milk
- 1/3 c. molasses
- 1/3 c. oil
Directions

1To toast oats, spread onto ungreased cake pan. Bake at 350° for 14 to 18 minutes; cool. In medium bowl, stir together flour, baking powder, salt and cinnamon. Stir in sugar and toasted oats. In small bowl, beat egg. Add milk and molasses to egg; beat well. Add to flour mixture. Add oil. Stir until dry ingredients are moistened. Fill muffin tins sprayed with cooking spray 2/3 full. Bake in preheated 400° oven 15 to 18 minutes.
