  • 3 eggs
  • 1/2 c. sugar
  • 1 c. light molasses
  • 1 Tbsp. cornmeal
  • 1 tsp. vinegar
  • 1/4 c. butter, melted
  • 1 c. chopped pecans
  • pastry (recipe follows)
  • whipped cream (optional)
  • pecan half (optional)

Directions

    Beat eggs at medium speed of an electric mixer until thick and lemon colored.

    Add sugar and next 4 ingredients; beat until blended.

    Stir in chopped pecans. Pour mixture into pastry shell. Bake at 350° for 35 to 40 minutes.

    Let cool completely.

    Garnish with whipped cream and a pecan half, if desired.
