Molded Beet Salad

Ingredients

  • 2 (3 oz.) pkg. lemon jello
  • 2 (16 oz.) cans diced or sliced red beets
  • 1/3 c. sugar
  • 1/4 c. vinegar
  • 1 c. diced celery
  • 1 Tbsp. grated onion
  • 1/8 tsp. salt
  • 1 Tbsp. mustard seed

Directions

    Drain beets and save juice, adding water to make 2 cups.

    Pour into saucepan with jello, sugar, vinegar, mustard seed and salt. Cook until all is dissolved and then cool.

    Meanwhile, dice celery and beets.

    Grate onion.

    Mix in cool gelatin and place in 9 x 13-inch dish or 8 x 12-inch dish.

    Cool until solid.

    Serve on lettuce.
