Mom'S Pecan Snowballs

Ingredients

  • 1 c. sifted all-purpose flour
  • 2 Tbsp. granulated sugar
  • 1/2 c. soft butter
  • 1/8 tsp. salt
  • 1 c. finely chopped pecans
  • 1 tsp. vanilla extract
  • confectioners sugar

Directions

    In a large bowl, combine all ingredients except confectioners sugar.

    With hands, mix until thoroughly blended. Refrigerate dough 30 minutes.

    Preheat oven to 375°.

    Form dough into 1/4-inch balls.

    Place 1-inch apart on ungreased cookie sheets. Bake 15 to 20 minutes or until set but not brown.

    Let stand 1 minute. Remove to wire rack. Cool partially.

    Roll in confectioners sugar while still warm. Cool completely.

    Just before serving, re-roll in confectioners sugar.

    Makes about 20.

    May double recipe; dough keeps in refrigerator for up to a week.
