- 1 pkg. active dry yeast
- 1 c. warm water (105~ to 115~)
- 2 1/2 c. flour (1/2 wheat and 1/2 unbleached white)
- 2 to 3 Tbsp. olive oil
- 1 tsp. sugar (optional)
- 1 tsp. salt
Directions

1Dissolve yeast in warm water.

2Should be able to stick your finger in without burning yourself.

3Stir in remaining ingredients, mixing vigorously.

4Heat oven to 425°.

5Shouldn't be sticky.

6Should be semi-firm, but workable.

7If sticky, add a little flour.

8Let set for 5 to 10 minutes (cover bowl).

9Cook 15 minutes.

10Cover pizza pan with oil.

11Sprinkle cornmeal.

12Press in dough.
