- 1 lb. monkfish
- seasoned flour
- 4 Tbsp. butter
- 1 Tbsp. oil
- 1 clove garlic, minced
- 1 lemon
- 2 Tbsp. chopped parsley
- salt and cayenne pepper to taste
Directions

1Cut fish into one-inch chunks.

2Coat fish lightly in seasoned flour.

3Melt 3 tablespoons butter in large skillet.

4Add oil and garlic

5and saute one minute.

6Add floured fish.

7Cook over high heat until lightly browned, about 2 to 4 minutes.

8Add remaining butter.

9Add 1 tablespoon lemon zest.

10Squeeze half of lemon over fish and add parsley, salt and cayenne.

11Stir to blend ingredients.

12Serve fish with pan juices over top.
