- 1 medium onion (Very Fine Chop)
- 1 tablespoon extra virgin olive oil
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup cornmeal
- 3 cups vegetable stock or 3 cups water
- salt (to Taste)
Directions

1In A small to med Sized Sauce Pan.

2Heat Oil over Med - Med High Heat and Saute Onions for about 5 min (Till Soft).

3Place in a Double Boiler, careful not to add to much water.

4Add Corn Meal and Stock and Stir.

5Let cook in Double Boiler for about 15-20 minutes (Until Polenta is soft and Creamy)

6Salt to Taste.

7Serve Hot.
