Mostaccioli Salad

Ingredients

  • 1 box mostaccioli
  • 1/2 c. cooking oil
  • 1 1/2 c. white vinegar
  • 1 1/2 c. sugar
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic powder
  • 2 tsp. Dijon mustard
  • 1 bunch green onions, chopped
  • 1 medium cucumber (unpeeled), chopped
  • 10 to 15 cherry tomatoes, cut in 1/2

Directions

    Cook mostaccioli noodles.

    Drain.

    Pour cooking oil over top of mostaccioli; let drain.

    Mix vinegar, sugar, salt, pepper, garlic powder and Dijon mustard.

    Add chopped green onions, including the greens, and the chopped cucumber.

    Add the mostaccioli.

    Stir and refrigerate.

    Can refrigerate for 2 to 3 days, stirring occasionally.

    Before serving, add cherry tomatoes and stir.
