  • 1 c. corn meal
  • 1 c. flour
  • 3 1/2 tsp. baking powder
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 1 egg, slightly beaten
  • 1 c. milk
  • 1/2 c. oil

Directions

    Preheat oven to 425°.

    Grease well an 8 x 8-inch pan.

    Combine dry ingredients; make a well in the center. Blend egg, milk and oil in small bowl, then pour into dry ingredients.

    Stir only until moistened. Pour into prepared pan. Bake at 425° for 30 minutes. Serve hot.
