  • 1 1/2 cups walnuts
  • 1/2 cup drained, jarred roasted red bell peppers
  • 1/2 cup breadcrumbs
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup pomegranate juice
  • 2 tsp ground cumin
  • 1 tsp dried crushed red pepper
  • 3 Tbs pine nuts, toasted

    Combine first 7 ingredients in food processor. Puree until coarsely ground. Transfer to a bowl, cover and chill. Top with pine nuts and serve with warm or toasted pita bread or pita chips.
