Ingredients

  • 3 eggplant
  • 3 eggs, separated
  • 1/2 c. olive oil
  • salt and pepper
  • 1/2 tsp. thyme
  • 2 onions, chopped fine
  • 2 small cans tomato paste
  • 1 1/2 lb. ground meat
  • 1 stick butter
  • 1 c. milk
  • 3 Tbsp. dried parsley
  • 1 lb. coarsely grated Swiss cheese
  • grated Parmesan cheese
  • Progresso bread crumbs

Directions

    Slice the eggplant, rind and all, 1/4 inch thick.

    Salt thoroughly each slice and set aside in large bowl for 20 minutes (this is to remove the poison).
