Ingredients

  • 2 Cups lentils (presoak if necessary)
  • 1 onion finely chopped
  • canola or olive oil
  • salt and pepper to taste
  • 1 C long grain rice
  • 2 onions thinly sliced

Directions

    Place lentils in a 4 qt pot. Add 1 qt water and 1 tsp salt.

    Bring to a boil.Cover, reduce heat and simmer half-hour or until lentils are tender. Fry the oil in as little oil as possible(no more than 2 Tbs) until soft.

    Add to the cooked lentils

    When the lentils are tender, add the rice and enough water so the cooking liquid equals 2 cups.

    Season with some fresh ground pepper and 1 tsp salt as desired.

    Cook covered for another 20 minutes or until the rice is ready. Add more water if necessary.

    In a medium frying pan heat 2 Tbs oil.

    Fry the sliced onions until they are brown and crisp.

    Use the onions to garnish the rice lentil mixture.
