- 2 Cups lentils (presoak if necessary)
- 1 onion finely chopped
- canola or olive oil
- salt and pepper to taste
- 1 C long grain rice
- 2 onions thinly sliced
Directions

1Place lentils in a 4 qt pot. Add 1 qt water and 1 tsp salt.

2Bring to a boil.Cover, reduce heat and simmer half-hour or until lentils are tender. Fry the oil in as little oil as possible(no more than 2 Tbs) until soft.

3Add to the cooked lentils

4When the lentils are tender, add the rice and enough water so the cooking liquid equals 2 cups.

5Season with some fresh ground pepper and 1 tsp salt as desired.

6Cook covered for another 20 minutes or until the rice is ready. Add more water if necessary.

7In a medium frying pan heat 2 Tbs oil.

8Fry the sliced onions until they are brown and crisp.

9Use the onions to garnish the rice lentil mixture.
