- 2 cups white flour
- 12 cup soy flour
- 12 cup ground flax seeds
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 14 teaspoon salt
- 1 cup brown sugar, packed
- 1 14 cups buttermilk
- 1 14 cups vegetable oil
- 2 eggs
- 1 apple, peeled and grated
Directions

1Preheat oven to 350F

2Prepare muffin pan by spraying with cooking spray or lining them with paper cup liners.

3Combine flours, flax seed, baking powder, baking soda and salt in large mixing bowl.

4Add brown sugar and mix until blended.

5In separate small mixing bowl, whisk buttermilk, vegetable oil, eggs and grated apple together.

6Pour apple mixture into dry mixture and stir only until ingredients are blended.

7Fill muffin cups about two-thirds full.

8Bake for 18 to 20 minutes.

9Cool about 1 minute before removing from pan.

10Cool completely on wire racks.
