Mushroom Bake

Ingredients

  • 1 c. chopped celery
  • 1 c. chopped onion
  • 3 Tbsp. butter
  • 1 lb. fresh sliced mushrooms
  • 9 slices bread, cubed and toasted
  • 4 oz. Colby cheese, shredded
  • 4 oz. Monterey Jack cheese, shredded
  • 2 eggs, beaten
  • 2 c. milk
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. Italian seasoning

Directions

    Saute celery and onions in butter 5 minutes, add mushrooms and saute 5 minutes.

    Layer half each of bread cubes, cheeses and vegetables in a buttered 2 1/2-quart casserole.

    Repeat layers; set aside.

    Combine eggs, milk and seasonings; stir well.

    Pour over casserole.

    Bake at 350° for 1 hour.

    Remove from oven, let stand five minutes before serving.

    Yields 6 to 8 servings.
