- 1 cup Fresh Mushrooms, Sliced
- 1/4 cups Red Onion, Chopped
- 1 teaspoon Minced Garlic
- 1/4 cups Olive Oil, Plus 2 Tablespoons, Divided
- 1 can (15 Oz. Size) White Beans, Drained
- 2 Tablespoons Lemon Juice
- 3/4 teaspoons Salt
- 3/4 teaspoons Pepper
Directions

1Saute the mushrooms, onions, and garlic in a sauce pan with 2 tablespoons olive oil.

2Cook about 5 minutes or until the vegetables are soft.

3Let cool for a few minutes.

4Combine the beans, the cooked vegetables, remaining oil, and lemon juice in a food processor.

5Pulse until creamy.

6Stir in the salt and pepper.

7Refrigerate leftovers.
