- 4 Tbsp. margarine or butter
- 4 Tbsp. flour
- 2 (13 3/4 oz.) cans chicken broth
- 1 lb. fresh mushrooms, chopped
- 1 c. finely chopped onion
- 2 c. milk
- 1 c. heavy cream
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions

1In a heavy 4-quart pot, melt margarine over moderate heat. Stir in flour.

2Cook about 2 minutes, stirring constantly.

3Stir in chicken broth until smooth.

4Add mushrooms and onion.

5Bring mixture to a simmer.

6Cover and cook about 20 minutes over moderate heat.

7Stir in milk, cream and spices.

8Heat until warm.
