  • 1 c. sliced fresh mushrooms
  • 2/3 c. chopped onions
  • 2/3 c. chopped green pepper
  • 1 c. chopped fresh zucchini
  • 1 minced garlic
  • 2 Tbsp. vegetable oil
  • 5 eggs
  • 1/3 c. light cream
  • 1/2 tsp. salt
  • dash of pepper
  • 1 1/2 c. soft bread cubes, lightly packed
  • 8 oz. cream cheese, cut in 1/2-inch cubes
  • 1 c. shredded Cheddar cheese

Directions

    Saute mushrooms, onions, green pepper, zucchini and garlic in oil until crisp-tender.

    Beat eggs

    with cream, salt and pepper; add mushroom mixture, bread cubes, cream cheese and Cheddar.

    Stir thoroughly, but lightly, so cream cheese cubes are intact.

    Pour into well-greased 9-inch pie plate.

    Bake at 350° for 45 minutes or until set in center and brown.

    Cool 5 to 10 minutes.
