  • 4 large ripe tomatoes, chopped
  • 2 large onions, chopped
  • 1/2 c. celery, chopped
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1/2 tsp. oregano
  • 1/2 tsp. paprika
  • 1 (6 oz.) can tomato paste
  • 1/4 tsp. dried basil
  • 1 large bay leaf
  • 1/4 tsp. pepper
  • 1 lb. mushrooms, rinsed, trimmed and sliced
  • 8 lasagna noodles
  • 3 c. sauce (above)
  • 1 egg
  • 8 oz. Mozzarella cheese
  • 1/2 c. Parmesan cheese
  • 16 oz. cottage cheese

Directions

    Cook noodles according to package directions.

    Beat egg and stir in cottage cheese.

    Grease a 12 x 8-inch baking dish and line with a layer of noodles.

    Cover noodles with half of cottage cheese mixture.

    Then layer sauce, Mozzarella cheese and Parmesan cheese.

    Repeat layers.

    Bake at 350° for 40 minutes.
