  • 1 jar Seneca sliced mushrooms
  • 1 chopped onion
  • 3/4 c. heavy cream
  • 1/4 lb. grated Swiss cheese
  • 1 pkg. frozen spinach
  • 3 eggs
  • 3/4 c. milk
  • 2 Tbsp. butter
  • 2 pie crusts (deep dish)

Directions

    Precook pie crust at 400° for 2 to 3 minutes.

    In skillet, saute onions and mushrooms in butter.

    Cook and drain spinach and cut into small pieces.

    Add to skillet and mix.

    Allow to cool. Beat eggs, milk and cream.

    Add skillet mixture along with cheese and mix.

    Pour into pie crust and bake at 450° for 15 minutes. Reduce heat to 350° and continue cooking until golden brown, approximately 20 minutes.
