- 12-1 medium onion, diced
- 1 cup arborio rice
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 cups broth
- 12-1 cup mushroom, finely chopped
- 2 -3 tablespoons parmesan cheese, grated
- salt, pepper
Directions

1Add oil, butter, onions and rice to a pot and slowly sweat until rice starts getting translucent.

2Add broth.

3Any kind will be fine.

4Simmer on low.

5Keep checking to see if you have to add more broth or water.

6Once the rice is done mix in the cheese and mushrooms.

7(If you chop them really fine, they will kind of melt into the rice and not taste raw).

8You might have to add a bit more broth or water.

9Add salt and pepper, taste and adjust seasoning.
