Mushroom Roll-Ups

- 12 to 18 oz. fresh mushrooms, chopped
- 3/4 c. butter
- 4 1/2 Tbsp. flour
- 1 1/2 c. light cream or use 6 1/2 oz. evaporated milk and 5 1/2 oz. milk
- 1 1/8 tsp. salt
- 3/8 tsp. m.s.g. (Accent)
- 1 Tbsp. chives
- 1 1/2 tsp. lemon juice
- 1 1/2 loaves bread
- butter, softened
Directions

1Cut off crust from each slice of bread.

2Roll slices thin and flat with rolling pin.

3Saute mushrooms in butter for five minutes.

4Stir in flour until well blended.

5Stir in cream or milk; cook, stirring constantly, until thickened.

6Stir in salt, m.s.g., chives and lemon juice.

7Remove from heat.

8Place one to two teaspoons of the mixture on each slice of bread and roll up like a jelly roll.

9Butter the top side of each with the softened butter.

10Freeze.

11When ready to serve, cut in half and place on cookie sheet.

12Bake at 400° for about 30 minutes or until light brown.
