  • 1/2 lb. mushrooms (mixed wild and domestic are best)
  • 1 small onion, coarsely chopped
  • 2 c. chicken broth
  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1/2 c. whole milk
  • 1 1/2 c. half and half
  • salt and freshly ground pepper to taste
  • 1 Tbsp. dry sherry
  • sliced mushrooms (for garnish)

    Finely chop 1/2 pound mushrooms and onion in blender or processor.

    Transfer to heavy saucepan.
