- 1 small onion, coarsely chopped
- 2 c. chicken broth
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/2 c. whole milk
- 1 1/2 c. half and half
- salt and freshly ground pepper to taste
- 1 Tbsp. dry sherry
- sliced mushrooms (for garnish)
Directions

1Finely chop 1/2 pound mushrooms and onion in blender or processor.
