- 1 1/2 qt. good rich stock (veal or chicken)
- 1 Tbsp. flour
- 1 Tbsp. butter
- 1 tsp. salt
- 1/2 tsp. pepper (black)
Directions

1Wash and peel mushrooms and dice.

2Stir into the mushrooms, the stock (veal or chicken).

3Thicken with flour that has been mixed with butter, salt and pepper until creamy.

4At the last moment, add a bit of whipped cream or croutons.
