Mushroom Soup

Ingredients

  • 2 oz. butter
  • 2 spring onions, finely chopped
  • 8 oz. mushrooms, sliced
  • 10 fl. oz. chicken stock
  • 10 fl. oz. milk
  • 1 tbsp. flour
  • Salt and pepper to taste
  • 5 fl. oz. single cream

Directions

    Melt 3/4 of the butter in a saucepan.

    Add onions and mushrooms and fry for 3 minutes.

    Pour in the stock and milk, bring to a boil and simmer.

    Cover for 20 minutes.

    Blend in blender.

    Melt the remaining butter.

    Stir in flour to form a smooth paste.

    Gradually stir in the pureed soup and bring back to a boil.

    Season to taste and stir in cream.
