- 2 oz. butter
- 2 spring onions, finely chopped
- 8 oz. mushrooms, sliced
- 10 fl. oz. chicken stock
- 10 fl. oz. milk
- 1 tbsp. flour
- Salt and pepper to taste
- 5 fl. oz. single cream
Directions

1Melt 3/4 of the butter in a saucepan.

2Add onions and mushrooms and fry for 3 minutes.

3Pour in the stock and milk, bring to a boil and simmer.

4Cover for 20 minutes.

5Blend in blender.

6Melt the remaining butter.

7Stir in flour to form a smooth paste.

8Gradually stir in the pureed soup and bring back to a boil.

9Season to taste and stir in cream.
