Mushroom Stew

Ingredients

  • 1 oz. dried mushrooms
  • 1 Tbsp. butter
  • 3 medium leeks
  • 1 lb. mushrooms
  • 2/3 c. white wine
  • 3 Tbsp. Ruby Port
  • 3 Tbsp. Madeira
  • salt and pepper
  • 2 Tbsp. sour cream
  • 1/2 tsp. sherry or wine vinegar
  • parsley
  • 1 c. hot water

Directions

    Soak dried mushrooms in 1 cup hot water.

    Cook leeks in butter for 10 minutes.

    Add mushrooms, liquid they soaked in, wine and cook, covered, for 5 minutes.

    Uncover, cook 15 minutes more, until liquid is reduced.

    Add Madeira and Port, cook another 5 minutes.

    Add sour cream and either sherry or wine vinegar right before serving.
