- 1 oz. dried mushrooms
- 1 Tbsp. butter
- 3 medium leeks
- 1 lb. mushrooms
- 2/3 c. white wine
- 3 Tbsp. Ruby Port
- 3 Tbsp. Madeira
- salt and pepper
- 2 Tbsp. sour cream
- 1/2 tsp. sherry or wine vinegar
- parsley
- 1 c. hot water
Directions

1Soak dried mushrooms in 1 cup hot water.

2Cook leeks in butter for 10 minutes.

3Add mushrooms, liquid they soaked in, wine and cook, covered, for 5 minutes.

4Uncover, cook 15 minutes more, until liquid is reduced.

5Add Madeira and Port, cook another 5 minutes.

6Add sour cream and either sherry or wine vinegar right before serving.
