Ingredients

  • 4 cups old-fashioned oats (about a pound)
  • 1 1/3 c (6 oz) raw pistachios
  • 2 cups (6 oz) sliced almonds
  • 1 cup maple syrup
  • 1/3 cup unsweetened applesauce
  • 1/3 cup oil (olive or canola)
  • 1 teaspoon kosher salt
  • 1 teaspoon cinnamon
  • 1 cup dried cranberries

    Preheat oven to 300

    Combine oats and nuts in large bowl

    In 2 cup glass measuring cup combine maple syrup, applesauce, oil, salt and cinnamon

    Pour over dry ingredients in bowl and mix to combine

    Spread on 2 half sheet pans lined with parchment paper or silpat liners

    Bake 25 minutes, stir, switch the pan positions top to bottom, and bake another 20 minutes

    Cool completely, then transfer to large bowl, add cranberries and stir

    Store in air-tight container
