- 8 tender arugula leaves
- 1 ripe plum tomato, cut into 1/4-inch strips
- 1 tablespoon balsamic vinegar
- Salt and pepper, to taste
- 3 slices mozzarella (about 1/8 inch thick)
- 4 whole fresh basil leaves, rinsed and patted dry
- 2 thin slices (2 ounces) prosciutto di Parma
- 4 thin slices (1 ounce) Genoa salami
