My Hummous Bi Tahini

Ingredients

  • 2 cans of Hummous beans, drained and rinsed well with water
  • (or soak dried beans overnight with a pinch of baking soda in c old water, drain and rinse thoroughly in the morning and then boil in fresh cold water for 1.5 hours)
  • 2/3 cup of tahini (sesame seed) paste *I prefer Cortas or another Arabic brand!
  • 3 cloves of fresh garlic, chopped and crushed with 1/2 teaspoon of salt in a pestle and mortar
  • 3 freshly squeezed lemons, juiced (have an extra one on hand just in case)
  • 1 tablespoon of olive oil
  • 1/2 cup of cold water from the fridge
  • Garnish: olive oil, cumin, parsley (optional)
