- grated peel from large lemon
- 2 Tbsp. flour
- 1 c. milk
- 3 large egg yolks and whites, separated (room temperature)
- 3 Tbsp. fresh lemon juice
- 1 Tbsp. oleo, melted
- 1 c. sugar
Directions

1Mix together the lemon peel, juice, flour and butter.

2Beat smooth.

3Add milk, sugar and egg yolks until blended.

4Beat egg whites until stiff and peaks form.

5Fold into egg yolk mixture. Pour into crust.

6Bake 40 to 50 minutes at 325°.

7Serve chilled. Cover and refrigerate up to 2 days.
