My Mother's Ice Cream Biscuit Sandwich

- 100 ml Heavy cream
- 1 tbsp Strawberry jam
- 2 tsp Lemon juice
Directions

1Add the jam and lemon juice to the heavy cream, and whip!

2You can make the cream in about 2 minutes.

3Whip until stiff peaks form because the cream will be easier to sandwich between biscuits.

4Spread the cream on a biscuit, then sandwich it with another biscuit.

5Chill in the freezer for about 1 hour.
