Naan Pumpkin Pizza

Ingredients

  • 1 lb pumpkin, peeled, cut into 1/2 inch cubes
  • 2 tbsp korma paste
  • 1 tbsp olive oil
  • 4 None garlic naan breads
  • 1 None small red onion, peeled and thinly sliced
  • 1/2 cup thawed frozen peas
  • 7 oz paneer cheese, chopped
  • 1 cup mozzarella, grated
  • None None mango chutney, to serve

    Preheat the oven to 400°F. Line 2 baking trays with parchment paper.

    In a medium bowl, combine the pumpkin, korma paste and oil. Toss to coat. Spread evenly over one tray. Bake for 15-20 mins, until golden and tender.

    Increase the oven temp to 425°F . Arrange the naan on second tray and divide the pumpkin evenly among each. Using a fork, roughly squash the pumpkin onto the bases. Top evenly with onion, peas, paneer and mozzarella.

    Bake the pizzas 10-15 mins, until golden and the mozzarella melts. Cut into quarters and serve with mango chutney.
