- 18 large pepperoni slices
- 14 cup ultra- low-carb marinara sauce (Transforming Recipes Cookbook, page 169 or any low carb sauce)
- 14 cup cheddar cheese (shredded)
- 2 tablespoons jalapenos (diced)
- 2 tablespoons black olives (sliced)

1Set oven to broil.

2Line baking sheet with aluminum foil.

3Place two paper towels on a microwave-safe plate.

4Arrange pepperoni sliced in a single layer on plate.

5Cover with another paper towel.

6Microwave on high for 1 minute.

7Remove from microwave.

8Push down on chips, soaking up excess grease.

9When pepperoni slices are crisp, arrange in a single layer on baking sheet.

10Spoon a small dollop of Marinara sauce on top of pepperoni slices.

11Sprinkle cheese on top of sauce.

12Place under broiler for 1-2 minutes or until cheese begins to melt.
