  • 1 pound Hamburger
  • 1 can (14 Oz. Size) Chicken Broth
  • 1 can (15 Oz. Size) Mexicorn, Drained
  • 1 can Rotel Diced Tomatoes (10 Ounce Can)
  • 1 can (15 Oz. Size) Ranch Style Beans Or Chili Beans, Undrained
  • 2 Tablespoons Ranch Dip Mix
  • 1/3 blocks Velveeta, Cubed (16 Ounce Loaf)
  • Tortilla Chips

Directions

    Start by browning hamburger in a medium stockpot. Drain and rinse hamburger and return to pot. Add chicken broth, corn, Rotel, beans and dip mix to pot, bringing to a boil. Turn heat down and bring to a simmer and add Velveeta chunks, stirring frequently. Once cheese is fully melted, serve immediately. Top with crushed tortilla chips and enjoy!

    Add some heat to the recipe by substituting Jimmy Dean Hot Sausage for the hamburger, using Hot Rotel or by adding a chopped jalapeno.
