  • Tortilla chips or nacho cheese Doritos
  • chopped onions
  • chedder/colby cheese, shredded
  • can of black beans
  • 1-2 cups brown rice
  • guacamole/sour cream/salsa (I don't use these ingredients but most people like them)

Directions

    Heat the black beans on the stove and prepare the brown rice via package directions.

    Shred cheese and chop onions.

    Put your choice of chips on a plate, adding layers of shredded cheese between layers of chips.

    Microwave on 60-70% power for 1 minute or until cheese is melted. (alt. methods include BROIL setting in oven)

    Top with brown rice, black beans, onions, guacamole, sour cream, and whatever toppings you have a taste for. i.e. salsa. Enjoy.
