- 3 eggs
- 3/4 c. milk
- 2 Tbsp. sugar
- 1/2 tsp. salt
- 6 Tbsp. flour
Directions

1Beat eggs.

2Mix sugar, salt and flour well and stir quickly into the eggs.

3Add milk and beat hard so batter is smooth with no lumps.

4Have ready 1 or 2 (6-inch) frying pans, lightly buttered and well heated.

5Pour just enough batter into each to cover bottom of pan when it is tilted and swirled.

6Shake the pan over the burner until they are brown on bottom and firm to touch on top.

7Do not turn.

8Set each aside to cool.

9These can be prepared several hours before using.

10Makes 16 to 18 pancakes.
