  • 12 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 tablespoons diced red chilies
  • 12 sliced shallot
  • 1 cup sliced cucumber
  • coriander leaves (to garnish)

Directions

    Dissolve sugar and salt in vinegar over low heat.

    To serve, add chilies, shallots and cucumber to liquid.
