  • 2 cups cornmeal
  • 12 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 14 teaspoons salt
  • 1 teaspoon baking soda
  • 2 12 cups milk
  • 2 tablespoons cooking oil (corn, vegetable, canola)
  • 1 tablespoon onion (dried or fresh, minced)
  • 1 cup sharp cheddar cheese, shredded
  • 1 (8 3/4 ounce) can whole corn, drained
  • 1 (4 ounce) can green chili peppers (seeded, rinsed, chopped)
  • 14 cup red bell pepper, chopped

Directions

    In a medium sized bowl, mix all dry ingredients.

    In a smaller bowl, mix wet ingredients.

    Add wet mixture to dry mixture, blend.

    Add in onion, cheese, corn, peppers, blend until smooth.

    Bake at 375 for 25-30 minutes.
