- 4 lb. navy beans
- water
- 5 bunches green onions, finely chopped (both green and white portions)
- 1 c. pimento, finely diced
- 3 lb. cooked ham, thinly sliced and very finely diced
- salt to taste
- pepper to taste
- Beau Monde seasoning to taste
Directions

1Wash beans.

2Place beans in 15-quart pot with water to just cover.

3Boil the beans until very tender and soupy, adding water as needed, for approximately 4 hours.

4Add remaining ingredients. Simmer for 1 hour.

5May be frozen.

6Makes 12 quarts.
