Navy Bean Soup

Ingredients

  • 4 lb. navy beans
  • water
  • 5 bunches green onions, finely chopped (both green and white portions)
  • 1 c. pimento, finely diced
  • 3 lb. cooked ham, thinly sliced and very finely diced
  • salt to taste
  • pepper to taste
  • Beau Monde seasoning to taste

Directions

    Wash beans.

    Place beans in 15-quart pot with water to just cover.

    Boil the beans until very tender and soupy, adding water as needed, for approximately 4 hours.

    Add remaining ingredients. Simmer for 1 hour.

    May be frozen.

    Makes 12 quarts.
