Nectarine or Peach Chutney

Ingredients

  • 1 kg nectarines or 1 kg peach, peeled, seeded and chopped
  • 2 12 cups brown sugar
  • 2 12 cups cider vinegar
  • 1 teaspoon freshly grated ginger
  • 1 cinnamon stick (not ground)
  • 4 whole cloves
  • 1 12 teaspoons salt
  • 1 fresh red chili, deseeded and chopped
  • 1 apple, grated
  • 1 large onion, finely chopped

Directions

    Place all the ingredients in a large pan.

    Boil uncovered for 1 1/2 -2 hours (or until mixture has thickened slightly - stir every 20-30 minutes to stop the bottom burning.

    Pour into hot sterilised jars and seal while hot.

    Keep for 6-10 months in a dark cupboard.

    Once opened, keep in the fridge.
