- 6 Tbsp. butter
- 6 potatoes, peeled and quartered
- 2 c. onions, chopped
- 1 tsp. rosemary
- 1/2 tsp. sweet basil
- 1/2 tsp. ground bay leaf
- 1 tsp. salt
- 3 Tbsp. water
- 8 hard-boiled eggs, peeled
Directions

1Melt 4 tablespoons butter in large skillet. Add potatoes and fry until golden brown on all sides. Remove potatoes. Melt remaining butter; saute onions. Stir in spices, water and salt. Cook about 3 minutes; return potatoes to pan and add the whole eggs. Cook 5 minutes over low heat until potatoes are tender and eggs heated. Serves 8.
