Never-Fail Custard Pie

  • 4 eggs, beaten
  • 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 2 1/2 c. scalded milk
  • nutmeg
  • 9 or 10-inch unbaked pie shell

Directions

    Combine beaten eggs, sugar, salt and vanilla; add to scalded milk, stirring continuously.

    Pour 2/3 of mixture into pie shell. Sit it on oven rack and pour in remaining filling.

    Sprinkle with nutmeg.

    Bake at 400° for 10 minutes.

    Reduce heat to 350° and bake an additional 15 to 20 minutes, until knife inserted in center comes out clean.
